How to make asparagus cream soup

Hello. I have just finished my training, ate a banana, drank my protein supplement and whilst going home I encountered a stand with fresh fruits and vegetables, and there…. Exactly, the season for asparagus has opened. For me, however, it’s way too short, and I always wait for the rest of the year until I can cook, grill and bake those tasty veggies. I can make salads from asparagus, add them as a topping on a wholemeal flour pizza, I even eat asparagus straight from the water. However, there is one dish that I like the most. White asparagus cream soup! How to make it? You will find out below:

Preparation time: around 45 minutes 

Ingredients: 5-6 portions

  • Bunch of white asparagus
  • 2 celery stalks
  • 2 carrots
  • 1 medium onion
  • 2 garlic cloves
  • 100g of spinach
  • 600ml of vegetable stock
  • Coconut oil/olive oil
  • 100ml of dry white wine
  • Salt and pepper

Preparation

Grate the celery, onion and the carrot on a grater with large holes. Crush the garlic. Put everything in a pot of hot oil, add salt and let it simmer for around 10 minutes. While that’s happening, wash and peel the asparagus, then cut it into pieces and add to the other vegetables in the pot. Simmer for another 15 minutes. Add wine to the pot and let it simmer until it reduces completely, then add vegetable stock, bring it to a boil and let it simmer for 20 minutes. To finish off, add spinach (leaves or frozen), mix everything thoroughly and cook for a few more minutes. Add salt and pepper as per personal preference.
