Coconut and banana omelette


  • 3 eggs
  • ripe banana
  • 3 flat spoon of coconut flour
  • 1/4 cup water
  • Half a teaspoon of baking powder
  • Spoon of xylitol


Separate the yolk from egg whites. Beat the egg whites until they stiffen. Smush yolks and bananas with a fork, mix with flour, xylitol and baking powder, finally add the whipped egg whites. Pour over the pan with coconut oil, you can also add raspberries. Fry the omelette on both sides.
