My previous recipe for cold cheesecake delights, but the mass is definitely heavier and filling, this time I will show off something light like a “cloud” of strawberry flavor with jelly.
A maximum simple and quick recipe, without baking!.
- 500g cottage cheese (light version in my recipe)
- 3 tablespoons of erythritol / xylitol
- half a package of strawberry jelly (without sugar) 20g
- 2 tablespoons of gelatine
- package of jelly without sugar (14g) + sweetener
-all with the addition of xylitol: 750 kcal, 90P / 15F / 88C
-all with the addition of erythritol: 610 kcal, 90P / 15F / 77C
Prepare the jelly according to the procedure on the package and cool slightly (do not put in the fridge), then pour the cottage cheese, cooled jelly, xylitol and gelatine dissolved in 1/4 cup of warm water to the blender, blend everything into a homogeneous mass. Pour mass into a form, in my case a silicone one and cool (put it in freezer for 40 min, or in fridge for 2h), in the meantime prepare the jelly according to the recipe on the package and add xylitol at your desire (for me it’s a heaped spoon, if you like it sweet add more!). After forming of cheese mass, slowly pour the jelly on top and put it back into the fridge until it forms (it should take about 30 minutes)
